At this point every thing I’ve tasted has been superb from Preservation Distillery. The owner has an a well developed palate and has been buying old world barrels of whiskey for decades. Preservation distillery is about sustainability and recapturing the those big rich bourbon and rye flavors that were around 50-75 years ago. Hopefully, they will be able to get these bottles out to more and more states; but for now I’m happy that they are remaining a tucked away gem in Bardstown, KY.
